My company is opening an upscale convenience store. However, we have never done a convenience store before- just restaurants. Can someone give me a general idea of what a typical convenience store staff should look like? We have a GM picked out, but we don't know whether we ought to have two assistant managers or one, what they should be paid, and whether or not they should be salaried or hourly-shift leaders. Because the concept is upscale, we plan to have a full deli, so we're also wondering whether or not it makes sense to have a separate deli manager or if a store manager and assistant manager will suffice. Any advice would be helpful.
